Carefully selected blocks are harvested in the cool of the night, with fruit immediately processed and chilled to bag press. Once gently pressed, the resultant juice is lightly clarified and inoculated for a cool fermentation on oak. Following completion of ferment, the wine is further matured on yeast lees for 3 - 4 prior to blending and filtration.
Vineyard blocks are either single or double wire trellised, with or without foliage wire and are under drip irrigation. Wet and cool spring conditions led to low yields, with a cool/mild and somewhat dry summer extending ripening whilst providing good acid levels and fresh fruit characters.
